2 Pre-slaughter handling

Handling of animals pre-slaughter in the meat processing facility is crucial for meat quality. MPS Red Meat Slaughtering is able to training your staff and design stables and runways. Many sources state that not the stunning method as such but the animal handling and the quality of the stunning method is determining meat quality.

4 Bleeding & hollow knife systems

Depending on capacity and requirement of customer MPS Red Meat Slaughtering supplies both vertical and horizontal bleeding systems. From ergonomic manual work stations to advanced Q-line hollow knife blood collection systems.

5 Scalding

The method of scalding becomes more and more important in today's pig slaughterhouses, because of the operating costs and the development of cross contamination by the recycling of scalding water. All scalding systems will be delivered with required temperature control systems (steam or hot water) and circulation pumps. Heat exchangers can be offered as an option.

Condensation scalding Q-line

MPS Condensation scalding tunnel (vertical scalding) is based on a modular design for different circumstances and type of pigs. Optional a free standing / hanging construction can be offered.


Immersion scalding tank

(horizontal scalding)

MPS offers different immersion scalding solutions
  • Pull through immersion scalding. Stainless steel covering for the scalding tank can be offered as an option.
  • Turn-O-Matic®

6 Dehairing

Achieving maximum dehairing results can only expected when the dehairing equipment is optimized for the scalding system. Besides the MPS equipment issues like scalding time, scalding temperature, breed of pig, seasonal influences etcetera will influence the dehairing result. Therefore MPS offers different types of dehairing machines to suite specific dehairing conditions.

Continuous dehairing:

Tarzan dehairing – Q-line
  • 240-1400 pigs per hour.

  • Efficient hair discharge system

Discontinues dehairing systems:

Hercules (120-250 p/h) double scraper drum, left/right rotation
Goliath (40 -120 p/h) single scraper drum

7 Gambrelling

After dehairing, pigs will be gambrelled or hooked on and elevated up to the buffer rail in front of the machine / dressing line conveyor. Several gambrelling tables are available in a fixed or with moving top execution. The Q-line gambrelling tables with conveyor can be combined with automatic gambrel return systems in order to create a more ergonomic working position for the gambrelling operator(s).

8 Carcass finishing

(dry, singe, wash & polish)

The MPS machine line can be supplied with all types of pre-dryers, flaming furnaces and washing and polishing machines in order to achieve the most effective skin cleaning and decontamination. These machines will minimise the bacterial growth and will positively influence the plant hygiene.

Drying
  • Removal of loose hair
  • Drying prior to singing

Singing (flaming)
  • Removal of last hair and bristles
  • Disinfecting of the surface


Polishing
  • Carcass polishing and washing machines.
  • Special version with adjustable rollers for sow slaughtering
  • Brushing machines with special nylon brushes for intensive cleaning of heads and hind feet are also available.
Decontamination
  • Disinfecting of the surface
  • Extending shelf-life of the product (Total Bacteria Count 10x lower)

9 Evisceration

Adding value to the carcass drives the evisceration process. MPS designed both manual and automated evisceration systems based on:
  • Optimize labour use
  • Maximize slaughter efficiency
  • Minimize contamination

Manual Evisceration

The MPS manual evisceration system is based around equipment that create ergonomic working positions. Each concept complies with all requirements for the use of 100% synchronous conveyors for carcasses and organs.

10 Chilling & Cooling


Chilling
Most of today’s modern meat plants are provided with a quick chill tunnel to reduce the carcass temperature as soon as possible and avoid unnecessary weight losses.



Cooling or Equalisation rooms
For the installation of the cooling rooms MPS supplies both automatic and manual transport systems.


11 Dispatch

For an efficient dispatch of the carcasses or meat racks, MPS provides several solutions for loading the trucks from the internal rail system.
