Friday 29 June 2007Heat and Control's patented HeatWave frying system cooks with curtains of oil for more uniform product quality, cleaner operation, and the lowest system oil volume of any continuous fryer.
Multiple curtains of oil enrobe foods in only clean, filtered oil. Fines are removed almost immediately after they enter the oil. After passing over the product, oil flows through the conveyor and quickly carries fines out of the fryer. Oil flow and the wiping action of the conveyor belt clean fines from the full width of the pan, while total system oil volume circulates through a continuous filter within seconds.
