Sugar syrup (sweeteners) manufacture

The starch slurry is also the starting raw material for the manufacture of sugar syrups; which are produced by the action of acids, enzymes or a combination of both. The process is made in different liquefaction, saccharification and isomerisation reactors. In a typical process, dilute hydrochloric acid and a starch slurry (the final product of starch manufacture before drying) are mixed. The temperature is then raised to around
140 °C. Conversion of the starch only takes a few minutes. The mass is neutralised and purified to eliminate impurities (protein, fat, minerals) insoluble matter removed by filtration and the liquor is concentrated. The liquor is usually filtered and treated with active charcoal or ion exchange resins to remove colour, ash and other minor impurities, e.g minerals. The liquid sweetener resulting can be sold as such or directly dried, or crystallised to produce dry sweeteners.

Is fructose gezonder dan suiker van bieten en van stengels? Wordt fructose nu inderdaad ook gemaakt van suikerbieten?

Fructose wordt in het algemeen middels een enzymatisch proces gemaakt uit zetmeel, maar kan ook d.m.v. inversie uit saccharose (bv. uit suikerbieten) gemaakt worden. Over gezondheidsverschillen kunnen wij geen uitspraak doen.

onze kleinzoon met diverse allergieen mag geen bietsuiker, maar volgens zijn arts wel rietsuiker. Als ik nu lees, dat suiker uit bieten hetzelfde is als suiker uit stengels, begrijp ik dat niet goed.

Het volgende is verwoord door de Suikerstichting Nederland in 1987:

Tussen geraffineerde rietsuiker en geraffineerde bietsuiker bestaat geen enkel verschil. Beide zijn wit en bestaan voor vrijwel 100% uit saccharose, d.w.z. ze zijn identiek zowel chemisch, physisch, biologisch als organoleptisch.

Tussen ruwe bietsuiker en ruwe rietsuiker bestaan kleine verschillen, die voortvloeien uit de onzuiverheden welke zij bevatten en die betrekking hebben op restanten van enerzijds suikerbiet en anderzijds het suikerriet. Voornamelijk is dit een smaakkwestie: het aroma van ruwe rietsuiker komt bij de mens aangenaam over, dat van ruwe bietsuiker niet.

De ruwe rietsuiker wordt soms in de handel gebracht onder de naam "geaffineerde rietsuiker".
De bewerking "affineren" (niet te verwarren met “raffineren", waarbij de ruwsuiker geheel wordt opgelost en via zuiveringen, gevolgd door kristallisatie, wordt omgezet in witsuiker) betekent in de suikerfabriek het schoonstomen van suikerkristallen.

Ten onrechte wordt op deze zeer geringe hoeveelheid onzuiverheden de gezondheidsclaim gelegd, gebaseerd op vitamines en mineralen, waaruit de onzuiverheden zouden zijn opgebouwd.

Ik wil graag Fructose gebruiken, om te bakken, ipv "gewone suiker", maar ik weet niet wat de bakeigenschappen zijn van Fructose. Wie kan mij hier een antwoord op geven? bvd
